Cucinata in questo modo la carne rimane tenerissima e succosa e il timo dà al vitello e alle patate un profumo magnifico!!!
Direi che come inizio, non c'è male...
Ingredienti (per 4 persone)
600 g filetto di vitello intero
30 g timo
3 albumi
400 g sale fino
10 g fecola
20 g burro
2 cl. olio extra vergine d’oliva
1 foglio carta forno
2 patate
Procedimento
Montare a neve ferma l’albume, aggiungere il sale e la fecola mescolati insieme.
Salare il filetto di vitello e rosolarlo in padella con olio e burro spumeggiante per circa 5-6 minuti.
Avvolgere la carne in carta forno con all’interno il timo e le patate pelate e tagliate a fette di 2 mm. Sigillare bene, spalmare 1/4 del sale e albume su una placca da forno, adagiare il filetto avvolto nella carta e ricoprire con la restante massa. Avere la certezza che sia tutto ben coperto. Mettere in forno pre riscaldato a 200° per circa 30 minuti. Trascorso il tempo mettere il tutto su un tagliere, spaccare la crosta, aprire la carta, adagiare le patate sui piatti, tagliare il filetto in
12 fette, adagiarle 3 ciascuno, un filo d’olio extra vergine d’oliva a crudo e un po’ di pepe nero macinato fresco.
